Slow Cooker Honey Mustard Chicken

Soup free slow cooker recipe with a five minute prep time, does it get any better? Slow cookers aren’t just for fall and winter recipes, in fact they are great in the summer because they don’t heat up your whole house. Summers are busy enough, no one has time to make an extravagant meal every night making it a prime time to make this Slow Cooker Honey Mustard Chicken your entire family will love. I don’t know about you, but I have a hard time finding new slow cooker recipes that don’t contain funky ingredients. Why is it that slow cookers automatically means you have to add Cream of Something Scary to it? Finally a slow cooker recipe that is simple, healthy, and no funky ingredients.

You know the drill, put your ingredients in the slow cooker, set it to low, come back a few hours later and there is dinner. This recipe makes for a quick and easy sandwich. We served ours up on our ‘go-to’ thin buns with some of our favorite BBQ sauce from Trader Joe’s.

 

Best BBQ Sauce

 

Have you ever stood in the BBQ sauce aisle for 10 minutes trying to find one with a decent ingredient list that you could recognize? I’m an Iowa girl, I like corn on the cob, but I don’t like corn in my BBQ sauce. There are a few brands out there that use REAL sugar if you look for it. We not only like the ingredients of TJ’s BBQ, we love the flavor as a perfect balance between sweet and spicy.

 

As I was saying, we enjoyed our Slow Cooker Honey Mustard Chicken with bbq sauce, a little smoked gouda for the Hubs, and some tamed jalapenos. You could skip the “fancy” toppings and just stick to a little bbq, still oh so delicious. We also enjoyed ours with a sweet & tangy kale salad that was prepared ahead of time, convenience at it’s finest.

 

By tamed jalapenos, I mean these bad boys.

They have the flavor of jalapenos without setting your nose on fire. They are also delicious on pizza!

Additional reasons I like this recipe, I can cook it on Sunday and enjoy it as lunch all week long, it freezes well for later, only one dish to wash, the slow cooker. Can’t get any more convenient than that!

Slow Cooker Honey Mustard Chicken

Ingredients

  • 4 chicken breasts
  • 1 cup spicy brown mustard
  • 1/2 cup honey
  • 2 Tbsp. crushed garlic
  • Salt & Pepper
  • 1/2 cup white cooking wine

Instructions

  1. Place chicken in bottom of slow cooker and add ingredients on top. Measurements are approximate. Cook on low for 6-7 hours (depending on your slow cooker).
  2. Serve on your favorite bread or bun with BBQ sauce. Could even add it to a bed of lettuce.
  3. Melted gouda and tamed jalapenos are optional sandwich toppings, but recommended.
  4. Easily makes ahead and keeps for 1 week in the refrigerator or longer in the freezer.
