Fast and Easy Pico de Gallo
Summer has officially arrived in Iowa and garden fresh tomato season is just around the corner. Having a plethora of tomatoes on hand will soon be a “problem” for those with a garden (jealous!). The rest of us will gladly adopt your juicy red tomatoes my dear garden growing friends (cough, hint, cough). This fast and easy Pico de Gallo is a great way to showcase those tomatoes atop eggs, Mexican food, or devoured with some of your favorite tortilla chips.
I don’t know about you, but I’ve been enjoying the cooler temps June has brought us here in Iowa. A few nights ago the Hubs, pup and myself enjoyed a nice long walk shortly after the downpour subsided. It was incredible outside! We headed out for a walk and ran into 3 other dogs leaving the townhouse association just as we were. We were clearly not the only ones looking to get some fresh June air! Needless to say, the sidewalks weren’t exactly dry which meant for a fluffy white dog that transformed into a soaked and muddy, but very happy dog! Immediate bathtime when we returned home.
For being a 5 lb. fluff ball, Ramsey is quite the running partner. This past Sunday I took him out for a run/walk and got absorbed by a podcast I was listening to and the little booger lasted for an hour with me! He loves going for a run, his energy amazes me.
He was getting a bit impatient waiting to go for our run when I was taking this photo. He was worried if he took his eyes off his leash he might get left behind. Ha! Crazy pup.
This weekend is already off to a great start, more walks with Hubs and pup which even included an adventure of getting locked out of the house. Yep, no cell phones, no spare key with a neighbor (or anyone for that matter, oops), and no way to get in. Little did I know, the Hubs is part McGiver and got up on the roof and “broke” into a bedroom window that was left unlocked. Lesson learned…I hope.

The zesty lime, crisp red onions, and earthy tomatoes make up to a full flavored Pico de Gallo that your friends will be begging for the recipe when they hear how easy it was to make.
- 2 large tomatoes, diced
- 1/4 red onion, diced
- 1/4 cup fresh cilantro, diced
- 1 lime, zested and juiced
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/8 tsp. salt
- 1/4 tsp. pepper
- Mix all ingredients together and let marinate for 30 minutes in the refrigerator before serving. Enjoy served with eggs, on tacos or your favorite Mexican entree, or with tortilla chips.
