Cilantro Lime Chicken Burgers
Freezer friendly and make-ahead Cilantro Lime Chicken Burgers are a great addition to Sunday meal prep to be enjoyed on those weeknights where you just don’t feel like cooking dinner.
What makes these burgers so good? They capture that hot off the grill flavor that you just can’t replicate on the stove and they are a great alternative to beef burgers. My inspiration for these came from some store bought chicken burgers from Trader Joes. Although they were from my loyal TJ’s, there were still some ingredients I wasn’t wild about and the price tag I wouldn’t necessarily call a bargain.
We had reached the point in the summer where we were tired of grilled chicken breast and although we enjoy beef burgers on occasion, we don’t tend to eat a lot of red meat. I knew I wasn’t ready to give up on grilling season just yet so I had to get creative.
Both the Hubs and I love all foods with a Mexican flare to it and I had some leftover cilantro in the fridge. Next thing ya know, Cilantro Lime Chicken burgers were the next big hit in our house.
I really like meal planning. In fact, I’m pretty loyal to my weekend meal planning, grocery shopping, and food prep. I don’t do it out of obligation, the kitchen is really my favorite place in the house, it’s my creative outlet. It’s almost like it’s therapy for me, ha!
These burgers fit very nicely into a little meal prepping on the weekend and you will definitely thank yourself later in the week (or even a few weeks down the road) when you get to pull these out of the freezer and toss on the grill for dinner. On the grill from frozen even. Yep, no thawing needed AND you know what’s in them, only wholesome clean ingredients. Can’t go wrong.
If you have a big family you could easily make a double batch so you have extras on hand. Since it’s just the Hubs and I, I stuck two patties in one ziploc bag separated by wax paper and two in a different bag. Dinner for 2, coming right up!
Is it just me or is it hard to believe it’s already Labor Day? I’m writing this post and feeling somewhat puzzled since we aren’t really celebrating Labor Day so it doesn’t feel like a holiday. That’s what happens when your Husband has a test the day after a holiday. Who does that!? Oh well, I’m still looking forward to the extra day off!

What’s your go to meat on the grill that never gets old?
- 1 lb. ground chicken
- 1/4 c. diced red onion
- 1/2 c. lightly packed fresh cilantro, diced
- 1/2 c. old fashion oats
- 1 egg
- 1 lime, juiced and zested
- Salt & pepper
- 1 1/2 tsp. garlic powder
- 1 tsp. onion powder
- 1/2 tsp. paprika
- 1/2 tsp. chili powder
- 1+ tsp. cumin (we like a lot of cumin so I usually sprinkle extra in)
- Mix all the ingredients together in a bowl with your hands
- Form 4 equal sized balls and flatten into thin patties
- Grill immediately or separate with wax paper and place in freezer bags to be frozen
- Burgers can be grilled from frozen with additional cooking time
- Grill on medium high heat flipping halfway through. Cook till well done.
- Serve on a bun or on a plate with your favorite toppings from pickles, avocados, red pepper spread, ketchup, salsa etc.
